Chicken Broccoli Bake

1 c dry rice
2 chicken breasts, cooked and chopped
2 cans cream of chicken soup
1/2 c milk
1 sm bag frozen broccoli florets
1 TBSP lemon juice
1/2 c onion, diced
1 c mayo
2 c shredded cheese

Prepare rice. Mix cooked rice, chicken, onions, and broccoli in a large bowl. In separate bowl, blend soup, lemon juice, mayo, and milk. Mix this with chicken mixture and pour into 9x13 pan. Top with cheese. Cover with heavy duty foil. Freeze. Thaw and bake at 350 for 45 min.

I finally found a chicken broccoli recipe my family loves. When I made this I didn't put onions in and I didn't freeze. I cooked the broccoli before I put it all together. Still cooked the same amount of time. This made enough for out family to have leftovers another night.

BBQ Chicken Thighs

10-12 boneless, skinless chicken thighs
Worcestershire sauce
1 bottle BBQ sauce

Place thighs in 9x13 pan. Pour Worcestershire sauce all over chicken. Then pour BBQ sauce on top. Bake at 350 for about 40 min.

I make this with chicken breasts instead of thighs and it works just fine. I love this cause it is so easy and I usually have everything on hand. I don't use a whole bottle of BBQ sauce, just enough to cover it all.

Chicken Noodle Soup

8 cups water
4 carrots chopped
3 celery ribs chopped

3-4 chicken bouillon cubes
1/3 package homemade noodles

2-3 chicken breasts- boiled and then broken up

Salt and Pepper to taste.

Add more water if needed.

My kids are not big soup eaters but they love this one. Its easy cause all you do is throw everything in and let it cook.

Baked Ziti

1 pound dry ziti pasta
1 pound ground beef
6 oz provolone cheese, sliced
6 oz mozzarella cheese, grated
1 onion, chopped
2 (26oz) jars spaghetti sauce
1 1/2 cups sour cream
2 TBSP grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 min; drain.
In a large skillet, brown onion and ground beef over medium heat, add spaghetti sauce, and simmer 15 min.
Preheat the oven to 350 degrees. Butter a 9x13 baking dish. Layer as follow: 1/2 of the ziti, provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. Bake for 30 min.

I got this from one of my neighbors and we really liked it. It makes a lot!! You could easily half the recipe and still have plenty!
