3-4 chicken breasts
1/2 cup BBQ sauce
1-2 apples, peeled and grated
1 lemon, juiced
6-8 slices bacon
Directions:
1. In small bowl, combine BBQ sauce with grated apple and lemon juice.
2. Place chicken breasts in base of crock pot, pour BBQ/apple mixture over the chicken. Wrap 2 pieces of bacon around each chicken breast. Set to low and cook for 8 hours.
serve with sweet potatoes, baked potatoes, mashed potatoes or rice

Teriyaki Chicken
1 small bag of baby carrots
1 can chunked pineapple ( 20 oz can)
1/2 large red onion cut in chunks
2 cloves garlic
4 chicken breasts or 6 thighs
1/2 cup teriyaki sauce
Salt and Pepper to taste
Layer vegetables/fruit/garlic first, then add the chicken on top. Drizzle teriyaki sauce over the chicken and add salt and pepper to taste.

When I made this I didn't add the red onion or garlic cloves. I put a little bit of garlic powder instead and I served this with rice.

Salisbury Steak
1 lb ground beef
1 can cream of chicken soup (divided)
½ cup Italian bread crumbs
1 egg, lightly beaten
¼ to ½ cup chopped onions
½ tsp garlic
½ tsp pepper-next time I make this I will probably cut this in half
1 Tbs oil
1 TBS butter, divided
1 14 oz can reduced sodium beef broth
1 (1.2 oz) packet brown gravy mix
Extra Gravy- I didn't make the extra gravy, I thought I had enough

Heat oil and 1 TBS butter in a large skillet. Brown beef patties on both
sides and transfer to a plate.
In a separate bowl whisk together remaining soup, gravy mix and broth.
Return patties to skillet and pour gravy mixture over the top. Cover pan
and simmer about 20 minutes.
Serve over hot cooked rice.

Pomegranate Salsa
1 cup pomegranate (1 whole)
1/2 cup green onions
6 clementines cut up
1/2 cup cilantro
2-3 avocados
1/2 tsp salt
3 Tbsp lime juice
3 Tbsp honey
1 jalapeno (optional)
Mix all the ingredients together.
This is more of a salsa for at Christmas time because that is when pomegranates are in the stores. This is always a huge hit whenever me or my mom make it.

Snickerdoodle Blondies
2 2/3 cups all purpose flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 cup unsalted butter, softened to cool room temp
1 cup granulated white sugar
1 cup (lightly packed) brown sugar
2 large eggs, at room temp
1 1/2 tsp pure vanilla extract
Cinnamon-Sugar Topping
2 TBSP white sugar
2 tsp cinnamon
Preheat oven to 350, Lightly butter a 9x13x2 inch baking pan.
Mix together flour, baking powder, cinnamon and salt. Set aside.
In large bowl, beat together butter and sugars until creamy. Add eggs and vanilla and mix until smooth.
Add the flour mixture and mix until the flour is just incorporated. The batter will be thick like cookie dough. Scrape batter into your prepared pan and spread evenly.
Make the topping by combining the sugar and cinnamon in a small bowl. Sprinkle the cinnamon-sugar topping evenly over the top of the batter. It will look like a lot, but it is perfect.
Bake 20-25 min or until a toothpick inserted comes out clean. Cool slightly before cutting.
I can't remember where I got this recipe but it is super yummy and taste just like snickerdoodle cookies. I made these in a 9x9 tonight and my family was mad there wasn't enough for seconds!

1/4 cup soy sauce
1/4 cup vegetable oil
1 tbsp honey
2 tsp minced garlic
1 1/2 tsp chili powder
Remainder:
6 boneless, skinless chicken thighs
corn tortillas
2 cups shredded Monterey Jack cheese
1 1/2 cups shredded lettuce
salsa
sour cream
cilantro
green onions
Place chicken and all marinade ingredients in zip lock bag for at least 4 hours in refrigerator. Cook chicken. When done, let rest for 5 min. Cut into strips. Lightly brush both sides of tortilla with oil. Grill them or lightly brown them in a pan. To serve: sprinkle tortilla with cheese then add rest of ingredients.

Chicken Broccoli Bake
1 c dry rice
2 chicken breasts, cooked and chopped
2 cans cream of chicken soup
1/2 c milk
1 sm bag frozen broccoli florets
1 TBSP lemon juice
1/2 c onion, diced
1 c mayo
2 c shredded cheese
Prepare rice. Mix cooked rice, chicken, onions, and broccoli in a large bowl. In separate bowl, blend soup, lemon juice, mayo, and milk. Mix this with chicken mixture and pour into 9x13 pan. Top with cheese. Cover with heavy duty foil. Freeze. Thaw and bake at 350 for 45 min.
I finally found a chicken broccoli recipe my family loves. When I made this I didn't put onions in and I didn't freeze. I cooked the broccoli before I put it all together. Still cooked the same amount of time. This made enough for out family to have leftovers another night.

Worcestershire sauce
1 bottle BBQ sauce
Place thighs in 9x13 pan. Pour Worcestershire sauce all over chicken. Then pour BBQ sauce on top. Bake at 350 for about 40 min.
I make this with chicken breasts instead of thighs and it works just fine. I love this cause it is so easy and I usually have everything on hand. I don't use a whole bottle of BBQ sauce, just enough to cover it all.

My kids are not big soup eaters but they love this one. Its easy cause all you do is throw everything in and let it cook.

6 oz provolone cheese, sliced
6 oz mozzarella cheese, grated
1 onion, chopped
2 (26oz) jars spaghetti sauce
1 1/2 cups sour cream
2 TBSP grated Parmesan cheese
Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 min; drain.
In a large skillet, brown onion and ground beef over medium heat, add spaghetti sauce, and simmer 15 min.
Preheat the oven to 350 degrees. Butter a 9x13 baking dish. Layer as follow: 1/2 of the ziti, provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. Bake for 30 min.
I got this from one of my neighbors and we really liked it. It makes a lot!! You could easily half the recipe and still have plenty!
